The Story Behind The Sauce
Red Label is my "original recipe" - having spent 4 years making hobby hot sauce to that point, Red Label was the cumulative result of those efforts. It had a unique flavor profile, well balanced and versatile and was great on anything I used it with. I cannot tell you how many prototypes went into this sauce - 4 years of making sauce every weekend, really. While I have gone in many directions since creating this delicious medium-heat carrot-based, fire-roasted sauce, Red Label remains one of my favorite sauces.
Moreover, this was the 1st sauce I'd made that folks started saying, "you really should sell this s***!"
Another 4 years of hobby sauce making, and I'd revisit this recipe from time to time, making small tweaks and falling in love with it again and again.
At one point I considered possibly discontinuing Red Label - my Green Label had recently won a Golden Chile, and Orange Label took 1st Place at the New Orleans Hot Sauce Festival, while Red Label had little to show for the awards entries. Reviewers gave it high praise (including inspiring one reviewer's first "10/10"!) but the judges didn't seem to get behind it.
Then at the end of 2012, I entered it into The Hot Pepper Awards, where it won 1st Place for "Sweet" and took #1 Overall Hot Sauce. Nice to have validation for the sauce that started it all. Without the early popularity of Red Label, there might not be a Lucky Dog Hot Sauce today.
Update, 07/07/17: Same great sauce, now with no added sugar. Red Label is now made with agave, and I could not be more pleased with the results!
